Description
There are 230 species of herbaceous perennial taproot plants in the genus Eryngium.
These plants are robust, with spines on the bracts surrounding the inflorescences as well as spiky entire or pinnate leaves.
The tiny blooms are encased in prickly wrapper leaves and grow in glabrous blue-blue inflorescences.
Since flowers’ colors don’t normally change over time, eryngium is utilized in dry bouquets.
The species Eryngium agavifolium can grow to a height of two meters.
The succulent basal leaves are gathered in a rosette, and the stalks themselves have thorny leaves.
